What's my lunch!

As promised! Here it is, today's lovely lunch. But first I have to tell you the story....

I planned to have a cucumber soup that I made and froze last summer when our garden was spitting out cucumbers with rapid abandon! But I discovered something...

This is me after 1 bite:










Soup is meant to be hot, and cucumbers are meant to be cold. That's the plain simple truth. So the soup went the way of my husband's leftover Ramen Noodle broth, and I decided to have a salad instead.

Mmmm, lovely veggies!


For dressing, I use 1 teaspoon of Olive oil and then sprinkle on some herbs and spices. I've been doing that for a while now, and I really enjoy it. 



Salad tip: add extra nutrition to a salad by sprinkling on herbs and spices!  Or better yet, throw in some fresh herbs! Add a small amount of olive oil, and you have a salad that doesn't need to be "dressed" up.

And the finished product: 
The bread is Nature's Own Sandwich rolls with a little REAL Mozzarella. They made a terrific salad companion without going overboard.  

The funny thing was, this is way less than I have been eating, but I was so full afterward! I didn't want to eat anything else. It satisfied me, which I totally did not expect. I thought I'd be fighting cravings all afternoon but I didn't get hungry again till well after 3pm.

OMG! You had me rolling on the floor! I just died when I saw your picture. You're right, cukes are meant to be eaten cold!

:-) I'm glad I could brighten your day. I haven't slacked off on this either. I did about a week of pictures, and then took a break from the holiday. I'm about to post what I took, and then promise to take pictures from now on :-P
